If there is one thing we love (especially this time of year), it is quick, healthy recipes that our family will actually EAT! If you’re like us, you spend plenty of time searching Pinterest for that perfect recipe, only to be disappointed when you whip up yet another “Pinterest fail!”
In addition to feeding the hungry in our local community, Produce for Kids, has launched a fantastic website chalked full of easy, healthy recipes for your family. It is a nationwide network of 200 food banks that leads the fight against hunger in the US, providing food to more than 46 million people through 60,000 food pantries and meal programs in communities across America–many right here in Southwest Missouri–helping our own friends and neighbors.

Now… Let’s get to the food! This Savory Stir Fry will be a hit at my house, no doubt, and by using these brands and shopping locally at select retailers, I feel good about helping feed another family!
Savory Stir Fry
- 2 tablespoons olive oil
- 1 small RealSweet® Vidalia® onion, sliced
- 1/4 cup reduced-sodium teriyaki marinade
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 package pre-cut broccoli & cauliflower florets
- 1 cup bell peppers, seeded, sliced
- 1/4 cup pistachios, shelled
- 1/2 pound boneless chicken breast, cut into 1/2-inch pieces
Directions: Heat oil in large skillet over medium-high heat; add onions and chicken, and cook 3 minutes. Add teriyaki marinade, garlic and ginger, and cook 2 minutes. Add broccoli, cauliflower and peppers, and cook 5 minutes, or until broccoli is tender and chicken is cooked through. Remove from heat and stir in pistachios.
Delicious when served with 1/2 cup brown rice!
