Easter is just days away! If you aren’t quite sure what you are going to take to your Easter dinner gathering, I’ve got you covered!
My mother used to make these mini-cheesecakes and they always made a beautiful dessert. Mix up the cheesecake, add fresh fruit or canned pie filling or just eat them plain. I suggest you adorn with your favorite fruit topping. She was notorious for topping them off with cherry pie filling and fresh blueberries and strawberries. This is a delicious dessert that even the kids will love! It is also easy and everyone will think you worked really hard, but don’t worry, your secret is safe with us!

Bonnie’s Mini Cheesecakes
- 2 packages of cream cheese (8 ounce packages)
- 2 eggs
- 1 cup of sugar
- 1 tsp vanilla
- Nilla Wafers
Preheat over to 350. Cream together cream cheese, eggs, sugar and vanilla. Place foil cupcake liners in in cupcake pan. Spray the liners. Place 1 wafer in the bottom of each liner and fill 3/4 of the way full with the cheesecake mixture. Bake for 18-20 minutes. Cool and top with our favorite topping.
