I love fall weather! It’s my absolute favorite season. Fall calls for warm comfort food. I love early nights at home with my family. Soup is a great fall meal. Moms can prepare and have it cooking in the crockpot early in the morning before they rush out the door. I’ve recently tried cauliflower soup. Surprisingly, it was a big hit. I hope you enjoy!
Cauliflower soup
- 1 head of cauliflower
- 8 oz Carrots
- 6 Celery stalks
- 1/2 stick of butter
- 1/4 C flour
- 3 C chicken broth
- 1 1/2 C heavy cream
- 1 1/2 C milk
- Parsley
- Salt
Directions:
Chop and sauté the cauliflower, carrots, and celery in butter. Once that becomes tender add flour. Mix in well. Pour in chicken broth. Simmer for 5 minutes or so. Then add heavy cream and milk.
Sprinkle in parsley and salt
