Struggling on figuring out what to have for lunch or what to make for your kiddos lunch? Here’s a new spin on your average tortilla roll-up! If you are like us, we are always looking to add to our “list” of the usual lunch box ideas. Try this chicken enchilada roll-up to add a spicy twist to your lunch routine.
Chicken Enchilada Dip Roll Ups
- 2-8 oz. packages cream cheese, softened
- 1 1/3 cup shredded Mexican blend cheese
- 1 tsp garlic, finely minced
- 1 ½ tbsp chili powder
- 1 tsp cumin
- cayenne pepper to taste (optional)
- salt to taste
- 1 rotisserie chicken, skinned and shredded
- handful cilantro chopped
- 4 green onions, chopped
- 10 oz can Rotel tomatoes
- 1 package jalapeno cheddar tortillas
Mix cheeses together until well blended. Add all remaining ingredients and mix well. Cover and refrigerate for at least one hour. Place one heaping spoonful onto tortilla. Spread to edges using a metal spatula. Roll and cut into slices.
